Sweet Signs of Spring: Maple Syrup Season

The sugaring season is always a welcome sign that the harsh winter months are ending and spring is on its way creating a seasonal tradition for many. Plus, who doesn’t love a plate of pancakes and maple syrup?

Canada may be the world’s maple syrup powerhouse (producing a whopping 75% of the global supply), but we have Indigenous peoples to thank for discovering the magic of maple. Long before European settlers arrived, the Anishinaabe, Abenaki, and Mi’kmaq tapped maple trees for their “sweet water.” Maple syrup played an essential role in their daily lives—as a natural sweetener, an anesthetic, a meat preservative, and a valuable trade commodity. Their knowledge laid the foundation for the maple syrup industry we know today.

The Science

The sugars in sap are created in the leaves through photosynthesis, and the best sap is the result of a perfect mix of seasonal conditions:

✅ Sunshine in the summer and autumn
✅ Cold winters
✅ Fluctuating temperatures near the end of winter causes pressure that either pushes or draws up the sap.
✅ Cold nights and warm days are perfect for sugaring and the duration of this type of weather determines the length of the sap harvest season.

Once tapped, it takes a lot of sap from sugar maples to make syrup. 40 gallons of sap for every one gallon of syrup.  A lot of water needs to be removed; sap’s sugar content is around 2%, while finished maple syrup’s sugar content is 66%.

As it boils, the water evaporates, concentrating the sugars and caramelizing into that signature maple flavor we all love.

In Ontario, maple syrup isn’t one-size-fits-all—different grades offer different flavour profiles. Whether you’re topping pancakes or adding depth to a recipe, here’s how to choose the right one:

Golden – Delicate and light, perfect for drizzling over fresh fruit and yogurt
Amber – A rich taste that shines in classic breakfast dishes
Dark – Robust and flavorful, great for baking or glazing meats
Very Dark – The boldest maple kick, ideal for cooking and BBQ sauces
